Cajun Shrimp & Sausage Jambalaya

This Cajun Shrimp & Sausage Jambalaya is packed with bold flavor and comes together in a single pot, making it perfect for busy weeknights. Loaded with smoky andouille sausage, tender shrimp, colorful vegetables, and seasoned rice, it's an easy way to bring Louisiana-inspired comfort food to your dinner table using LOZO's Marie's Blackened Cajun.

Ingredients

  • 2 tbsp LOZO's Marie's Blackened Cajun
  • 1 lb andouille sausage, sliced
  • ½ lb shrimp, peeled and deveined
  • 1 cup white rice
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 onion, diced
  • 2 celery stalks, chopped
  • 1 cup chicken stock
  • 1 tbsp tomato paste
  • 1 tbsp avocado oil

Instructions

  1. Toss the shrimp with the avocado oil and 1 tablespoon of LOZO's Marie's Blackened Cajun until evenly coated.
  2. Heat a large pot or Dutch oven over medium-high heat. Cook the shrimp for 1–2 minutes per side until just cooked through. Remove and set aside.
  3. Add the sliced andouille sausage to the pot and cook until browned. Remove and set aside with the shrimp.
  4. Add the onion, bell peppers, and celery to the same pot. Cook for 4–5 minutes, stirring occasionally, until softened.
  5. Stir in the tomato paste and the remaining tablespoon of LOZO's Marie's Blackened Cajun. Cook for 1 minute, stirring constantly.
  6. Add the rice and stir until evenly coated in the seasonings and vegetables.
  7. Return the cooked sausage to the pot and mix well.
  8. Pour in the chicken stock and bring the mixture to a boil.
  9. Cover, reduce heat to low, and simmer for about 20 minutes, or until the rice is tender and the liquid has been absorbed.
  10. Stir in the cooked shrimp and remove from heat.
  11. Let rest for 5 minutes before serving.

LOZO Tip

For even deeper Cajun flavor, let the sausage brown well before removing it from the pot. Those browned bits left behind add incredible flavor to the vegetables and rice.

Serve with hot sauce, cornbread, or a simple side salad for a complete meal.
