Crispy Cheesy Chicken Tacos

These Crispy Cheesy Chicken Tacos are one of my favorite ways to use LOZO Taco Tuesday. Seasoned shredded chicken is tucked inside cheesy tortillas and pan-fried until golden and crispy. They're easy enough for a weeknight dinner and perfect served with guacamole, rice, and refried beans.

Ingredients
- 1 lb chicken breast or thighs
- 2 tbsp LOZO Taco Tuesday Seasoning
- 1 tbsp avocado oil
- ¼ cup chicken stock
- 6 small flour tortillas
- 1½ cups quesadilla cheese
- 1 tbsp butter
Optional Toppings
- Diced onion
- Chopped cilantro
For Serving
- Guacamole
- Rice
- Refried beans
Instructions
- Toss the chicken with avocado oil and LOZO Taco Tuesday Seasoning until evenly coated.
- Heat a large skillet over medium-high heat and cook the chicken until fully cooked through, about 6–8 minutes.
- Remove the chicken from the skillet and shred using two forks.
- Return the shredded chicken to the skillet. Add the chicken stock and an additional sprinkle of Taco Tuesday Seasoning if desired. Simmer for 2–3 minutes until the liquid is mostly absorbed.
- Melt the butter in a clean skillet over medium heat.
- Place a tortilla in the skillet and sprinkle quesadilla cheese over one half of the tortilla.
- Add a portion of the shredded chicken over the cheese.
- Fold the tortilla in half and cook until golden brown and crispy, about 2–3 minutes.
- Carefully flip and cook the other side until the cheese is melted and the tortilla is crisp.
- Repeat with the remaining tortillas, adding more butter to the pan if needed.
- Carefully open each taco and add diced onion and cilantro if desired.
- Serve immediately with guacamole, rice, and refried beans.
LOZO Tip
For an extra layer of flavor, season the chicken with a pinch of LOZO Sazón and Adobo in addition to Taco Tuesday. The combination adds depth, color, and even more flavor.
